5 Quick + Easy Breakfasts

Let’s talk breakfast. It’s the most important meal of the day, right? And now that we’re not nearly as go, go, go as we used to be, there’s actually some time to have breakfast together.

But we know everyone still has things to do—hey, school and work didn’t get cancelled, just moved around. So here are five quick and easy breakfasts to make the family.

Breakfast Quesadillas

These are sure to please the crowd and are totally customizable!

What You’ll Need:

Eggs
Flour tortillas

Your choice of filling—here are some of our favorites:

  • Green peppers
  • Onions
  • Mushrooms
  • Spinach
  • Bacon
  • Sausage
  • Chorizo
  • Ham
  • Cheese
  • Avocado
  • Pico de gallo

Your choice of dips:

  • Sour cream
  • Salsa
  • Hot sauce
  • Guacamole

What You’ll Do:

Whisk your eggs together and scramble them. Don’t completely cook them. The eggs will be heated when added to the tortillas—and you don’t want tough eggs.

If using peppers or onions, you may want to sauté them in a skillet first so they’re slightly softened before adding in with the rest of the mix.

If using uncooked bacon or other meats, cook them in the skillet with the veggies as well.

Once the eggs and other fillings are cooked, remove them from the skillet. Add a non-stick spray or butter to the skillet, then lay the base tortilla on top. This will give the tortilla that nice brown color.

Add your fillings and place the other tortilla on top. Allow to sit for a minute or two (depending on the heat of your skillet; it shouldn’t be higher than medium) and use a spatula to flip over to cook the other side.

Cook each side just long enough for the fillings to get hot again and for the tortillas to crisp. Enjoy!

Egg In a Hole Breakfast Sandwich

Simple, but looks fancy as heck.

What You’ll Need:

2 large pieces of crusty bread
2 tsp. butter
½ avocado, sliced
1 tomato, sliced
2 slices of cheddar cheese (or your choice; if you want a kick, grab some pepper jack)
1 egg
Black pepper

What You’ll Do:

Use a circular cookie cutter (or a glass cup) to cut a hole in one of the slices of bread. Butter both sides of the two slices of bread and place in skillet. Cook over medium for a few minutes until the underside is golden brown; turn the slices over.

Turn the heat to low and top the whole slice of bread with the avocado, cheese and tomato. Crack the egg into the hole of the other slice of bread.

Cover the pan with a lid, and cook for a few minutes (until the cheese is melted and the egg is cooked to your liking). Sandwich the two pieces of bread together and voila!

Smoothie Bowl

While this particular recipe uses various berries and bananas, feel free to switch it up with other fruits!

What You’ll Need:

1 cup frozen mixed berries
1 small/medium ripe banana (sliced and frozen)
2–3 Tbsp. light coconut or almond milk (add more as you need)
1 scoop of plain or vanilla protein powder (optional)

Toppings—choose from:

  • 1 Tbsp. shredded unsweetened coconut
  • 1 Tbsp. chia seeds
  • 1 Tbsp. hemp seeds
  • Granola
  • Fruit

What You’ll Do

Add frozen berries and banana to a blender and blend on low until only small bits remain. Add a bit of coconut or almond milk (and the protein powder if using it), and blend on low again. Scrape down the sides as needed. Blend until the mix reaches a soft serve consistency.

Scoop into serving bowls and top with your choice of toppings.

Pro Tip: This makes about 1–2 servings. If you’d like to make more, adjust the ingredients accordingly.

Protein Pancakes

These pancakes may need a few more ingredients than your average pancake, but they are full of protein and won’t make you feel like all you’re eating is sugary bread.

What You’ll Need:

1 cup oats
1 banana
2 eggs
½ cup egg whites
4 tsp. baking powder
Pinch of salt
Pinch of cinnamon
1–2 scoops of protein powder
2 Tbsp. flax meal

What You’ll Do:

The easiest first step ever: Run everything through the blender on medium low speed until all is well mixed. Bam. Done.

Head a nonstick griddle to medium heat. Add batter (about ¼ cup per pancake) and sprinkle with additional goodies if desired—may we suggest blueberries or chocolate chips?

When the edges start to look dry (after about 2–3 minutes, flip the pancakes and cook for another minute or two.

Add your choice of toppings!

Cinnamon French Toast Sticks

For those who still really love eating with their hands.

What You’ll Need:

8 slices of thick-cut Texas toast (or any thick slices of bread so the sticks hold their shape)
4 large eggs
1 cup heavy cream
2 ½ tsp. cinnamon
1 Tbsp. sugar
1 Tbsp. vanilla extract
Unsalted butter, for cooking
Maple syrup

What You’ll Do:

Cut each slice of bread into four sticks. Set aside.

In a large bowl, whisk together eggs, heavy cream, cinnamon, sugar and vanilla. Dip each stick in the mixture, coating all sides. Make sure it’s well saturated.

Shake off any excess and place the coated sticks on a large plate. Repeat until all the sticks are coated.

Heat a large skillet over medium heat and add 2–3 Tbsp. of butter. Once the butter has melted, place several of the sticks in a single layer in the pan. Don’t overcrowd them!

Cook until golden brown on one side, then flip them to cook on the other side.

Serve immediately with maple syrup and your choice of other toppings!
